The water temperature is recommended to be about 80 degrees Celsus (176 °F) . If the temperature is higher than that, more Catechin will be released and the taste of the tea will become more bitter. Soft water is better than hard water for Matcha tea. 

In the Japanese tea ceremony, 1.5g of Matcha powder is used for about 70 ml of hot water, but you don’t need to follow this rule. It is a good idea to begin by making the tea thin (ex.170 ml, 6 oz), then thicken it according to your preference.  How to make Matcha tea casually.
